Toast eight slices of the bread of your choice.
Pour one cup of non-dairy milk in a medium sized mixing bowl and add two tables spoons of canola oil to it.
Also add apple cider vinegar, one tablespoon of sugar and half teaspoon of vanilla extract to the bowl and whisk well with a hand whisk to combine.
Cover the bowl and put it aside for 8 to 10 minutes to allow the milk to curdle.
Meanwhile, in a large mixing bowl, combine half cup of chickpea flour and one tablespoon of yeast flakes.
Add half teaspoon of salt, half teaspoon of cinnamon powder and half teaspoon of nutmeg powder to the flour and yeast flakes and mix well.
Pour the milk and apple cider vinegar mixture into the dry ingredients and whisk thoroughly until you get a smooth and creamy mixture.
Lightly grease a large non-stick skillet and heat it over medium-high heat for two to three minutes.
Take a toasted slice and dip it in the batter you had made above, turning once to properly coat the other side as well.
Place this toast in the hot skillet and fry it for one to two minutes or until golden brown.
Carefully flip the toast and cook the other side as well for a couple of minutes and transfer it to a large plate lined with paper towel.
Grease the skillet again and repeat the process for the remaining seven slices of the bread.
Sprinkle the French toasts with vegan powdered sugar and serve with jam or syrup of your choice.
