How to Make Grilled Kielbasa and Zucchini

This grilled Kielbasa and Zucchini blend is hearty, yummy and filling enough to satisfy your craving for something refreshing and crunchy. All ingredients of this recipe are easily available and may be possible that you might find them ready in your grocery bag. Serve your warm grilled Kielbasa and Zucchini with some freshly baked pitta breads or corn bread muffins to complement its overall crunchy texture and overall delicious taste. Ingredients:
Zucchini: 2 small
onion, finely chopped: 1 small
green pepper, finely chopped: ½  cup
Olive oil: 2 tablespoons
Smoked kielbasa: 1 pound
Whole kernel corn – well drained: 1 can (about 15-1/4 ounces)
Tomato Sauce: 1 can (about 8 ounces)
Italian seasoning: 2 teaspoons
Red pepper flakes, finely crushed: 1/8  teaspoon

Instructions

    Dispense 2 tablespoons of olive oil into a large non-sticking frying pan or skillet or and put  on your stove, turning on the heat at medium range.

    In the meantime, place the two small zucchini on a cutting board and cut them into 1/8-inch slices, using sharp knife. Moreover, cut the one pound of the smoked kielbasa lengthwise and then cut into about half inch slices and set aside on the cutting board.

    Once the oil is nicely warm, add in the zucchini slices and use a ladle to stir fry them until lightly tender and change color slightly.

    Top the fried zucchini with once small nicely chopped onion, half cup of green pepper. Continue stir fry for the next three minutes until the added vegetable slices are slightly soft.

    Now add the  smoked kielbasa slices, one can of drained whole kernel corn, 1 can tomato sauce, 2 teaspoons of  Italian seasoning and 1/8 teaspoon of crushed teaspoon of red pepper flakes.

    Now continue stir cook until the mixture is well heated through, cooked well and  crisp-tender.

    Your Grilled Kielbasa and Zucchini is ready; take the skillet or pan from stove and pour into a large serving pot or platter and serve warm with some fresh corn or pita bread. Enjoy!
