Recipe no 1
You will need ripe tomatoes without damage. Wash them, cut into large pieces and pass them through a blender. Put the resulting mash in a saucepan and cook over low heat until the volume of the mass is reduced by half. Set the pan aside from the heat when you see that it is well boiled and let it cool for about 30 minutes.
Recipe no 2
Try to cook tomato sauce with bacon, which gives a good taste especially with pasta. Finely chop the bacon and fry it in a deep frying pan. Finely chop onions, put them to the lard and fry until they turn golden brown. Scald tomatoes in boiling water, remove the peel and seeds and finely chop the flesh.
Chop the parsley and place it in the pan along with the tomatoes. Add salt and freshly ground black pepper. Pour them into a pan of hot water and cook the tomato mixture over low heat for about an hour. Now blend them for the sauce, after removing the outer skin.
Recipe no 4
Put the tomatoes in a deep frying pan with hot olive oil and add mashed garlic, hot pepper, a little lemon juice and fresh herbs. Stir and leave to simmer over moderate heat until the volume of liquid is reduced by half. When the sauce takes a finished shape, add a tablespoon of flour and stir thoroughly. This process will make it thick.
