First of all, you have to spray each head of the garlic with the cooking spray. Please keep in mind that you have to use the spray it lightly. After that, wrap each garlic head separately with the help of foiling paper. Then, take a small baking pan and place the garlic in it. Bake it in the oven at 400 degrees for around 45 minutes and let it cool down afterwards for around 10 minutes.
Now, separate the garlic cloves and squeeze the cloves in order to extract the pulp. You can discard the peels as you don’t need them.
Put garlic pulp, lemon juice, mustard and pepper in a blender container, cover it well and blend it until all the things mash up well.
Then, you have to take a large skillet and keep it on a medium-high heat stove, put some oil in it. Cook and stir zucchini and mushrooms in the hot oil for around 3 minutes or until the time when zucchini becomes tender-crispy. Now, add the mashed up garlic mixture, water and tomato, and mix them well.
After that, reduce the heat of the stove and let it cook, but keep stirring. When the cooking completes, toss the vegetables mixture with the cooked pasta and serve it as you wish.
