Take a saucepan and pour in some cold water, keeping your requirement in mind. Set the saucepan on stove and wait until the water starts boiling.
In the mean time, wash the brown rice with 2 to 3 changing of water until the water is no cloudier. Drain the rinsed brown rice with a sieve and add it to the boiling water.
Now, reduce the heat of the stove, cover the saucepan and let the brown rice simmer for about 30 minutes or until tender.
Remove the saucepan from heat, drain the boiled brown rice and set aside to cool to handle.
Whereas the boiled brown rice is cooling, taka a medium bowl and place the sultanas in it. Pour in boiling water until the sultanas in the bowl are completely covered. Leave them to soak for the next 20 minutes.
You still have some time as the rice is in the cooling process and the sultanas are soaking. So, pick a medium bowl and properly whisk the cream in it until smooth. Stir in the lemon juice and curry powder. Season with some salt and ground black pepper and mix well until the salt dissolves into the ingredients. Set it aside.
Shift the boiled brown rice into a large serving bowl and top with red pepper, apple slices and asparagus. Drain the soaked sultanas and add them in as well. Stir all these ingredients until mix well.
Drizzle in the curry-cream mixture and toss very smoothly to coat the ingredients.
