Take one seedless cucumber, wash it thoroughly, place it on a cutting board and cut it into slices. Place the cucumber slices in a large serving bowl.
Peel ½ of the onion a nd cut it into thin slices. Add them to the serving bowl.
Rinse the ripped tomatoes and cut them into quarters, equal to two small cups.
Note: You can replace the simple tomatoes with grape or cherry tomatoes.
Place tomato slices in the serving bowl and pour in ¼ cup of olive oil-and-vinegar dressing, ½ teaspoon of lemon zest and salt and pepper according to your taste. Take a large spoon and whisk and toss for a few seconds so that all the ingredients are properly mixed together.
Your Tomato and Cucumber Salad is ready; place it in the refrigerator for a few minutes before serving it.
