In a large mixing bowl, blend together the white pepper, red pepper, oregano, thyme and salt until merge well. Cover the bowl with a wrapping sheet or plate and set aside to marinade and until downy.
Add the unsalted butter to a large saucepan and melt by placing on the stove – with medium heat.
Add the chopped onion to the warm oil and stir fry until tender.
Now stir in chopped green pepper, celery, minced garlic, and two large bay leaves.
Increase the heat level to medium-high range and stir in the previously mixed seasoning mix.
Let this mixture simmer for 3 to 5 minutes, stirring with wooden ladle occasionally.
Now blend in the andouille sausage, chicken broth and Tabasco sauce.
Continue stirring cooking for 5 to 6 more minutes until all ingredients are tender and merge thoroughly.
In the meantime, crack the three large eggs into a large bowl and top with 5 cups of crumbled buttermilk cornbread.
Drizzle one and half cups of evaporated milk over the egg-bread mixture and use a whisk to blend the ingredients until it forms a rich mixture.
Now turn off the stove and add in the egg mixture. Incorporate both mixtures, using a large wooden spatula.
Pour the mixture into a large greased baking dish and use the spatula’s back side to spread and smooth its surface.
Turn your oven on at 350°F and wait until its baking portion is warm.
Place the baking dish in the oven and bake for 40 to 45 minutes or until the Cajun Cornbread Dressing is equally browned from all sides.
