Summer is a perfect excuse to whip up an appetizing and refreshing Tomato and Cucumber Salad. This pleasing side dish is super-simple to prepare and in addition, is a nutritious mixture of fresh and watery cucumbers and tomatoes. Traditionally, the Tomato and Cucumber Salad is served along with various types of meat dishes.
You will find hundreds of Tomato and Cucumber Salad Recipes online, but this recipe is so simple that it is made in no time. All you have to do is mix the ingredients and top them with an olive-vinegar dressing. This recipe makes only four servings but you have the option available to increase the amount of ingredients according to your need.

Utensils: Serving Bowl, Sharp Knife, Cutting Board, and Large Spoon or Whisk
- 1 seedless cucumber – finely sliced
- 1/2 small onion - thinly sliced
- 2 cups small cups ripped tomatoes - cut into quarters
- 1/4 cup olive oil-and-vinegar dressing
- 1/2 teaspoon lemon zest
- 1 tablespoon lemon juice – freshly squeezed
- Salt and pepper to taste
Take one seedless cucumber, wash it thoroughly, place it on a cutting board and cut it into slices. Place the cucumber slices in a large serving bowl.
Peel ½ of the onion a nd cut it into thin slices. Add them to the serving bowl.
Rinse the ripped tomatoes and cut them into quarters, equal to two small cups.
Note: You can replace the simple tomatoes with grape or cherry tomatoes.
Place tomato slices in the serving bowl and pour in ¼ cup of olive oil-and-vinegar dressing, ½ teaspoon of lemon zest and salt and pepper according to your taste. Take a large spoon and whisk and toss for a few seconds so that all the ingredients are properly mixed together.
Your Tomato and Cucumber Salad is ready; place it in the refrigerator for a few minutes before serving it.
