Country fried potatoes are a tradition in many families. Many of us can associate our childhood with this dish. Potato is a staple food and is widely available so this dish was made in numerous households. Many families have the recipe of their ancestors and are still following them.
Ingredients
  • Potatoes (or however many potatoes your family will eat) - 3 pounds
  • Medium onion, chopped - 1
  • Olive oil or canola oil - 3 tbsp
  • Butter - 3 tbsp
  • Salt - 1 tsp
  • Ground pepper - 1 tsp
Instructions
  1. Wash the potatoes so that there is no dirt on them.
  2. It is your choice if you want to eat the skin or not. So either let the skins stay or peel them.
  3. If the potatoes are of large size, cut them into quarters.
  4. If the potatoes are small, cut them in halves.
  5. Put the potatoes in a large pot and fill water in the pot.
  6. The level of the water should cover the potatoes. Boil the potatoes for around 20 to 25 minutes and check that they are soft.
  7. In a frying pan, melt the butter and add the olive oil, put the chopped onions in it.
  8. Let the onions cook for 5 minutes.
  9. In the meantime, cut the potatoes into cubes, they should be bite sized.
  10. Add them to the fry pan with the onions. Increase the heat to medium high and fry the potatoes carefully.
  11. Add the salt and pepper. Stir them with a wooden spoon and toss them around after every 4 to 5 minutes.
  12. Make sure that they are not burning, if you suspect they are, decrease the heat a little.
  13. It will take around 10 to 15 minutes for the potatoes to get brown.
  14. Grease a baking sheet and place the potatoes on it in a single layer.
  15. Bake them for 20 minutes at 350 degrees.
  16. They will get crisp around the edges.
  17. Serve them hot.
