However, unlike normal French soups, this soup is more luxurious, tastier and as the name suggests, with five varieties of onions. It is very easy to make if you love cooking but if you are an amateur and want to do it just for fun, think twice before making a final call.
Butter - 2 tablespoons
Thick bacon, chopped into bit sized pieces - 6 slices
Yellow onions, halved & sliced - 2 large
White onions, halved & sliced - 2 large
Red onions, halved & sliced - 2 large
Shallots, sliced - 4 large
Thyme - 1 tablespoon
Bay leaf - 1 large
Leeks, bottoms only, washed thoroughly & sliced - 3 large
Flour - 3 tablespoons
Chicken stock - 8 cups
Heavy cream - 1 cup
Salt and pepper
Take all the onions, peel and chop them and do not forget to chop the green onions in ⅓-inch pieces.
Now put the butter in a pan and melt it in a Dutch oven over a medium high heat.
Next take the bacon and carefully fry it until it is crispy. Remove it and set aside.
To the bacon, add the yellow, red, and white onions and stir it.
Add shallots, thyme, and bay leaf to it and keep on stirring until the onions begin to caramelize.
It will take around 15 minutes and add salt and pepper if you want according to your taste.
Add the leeks to the mixture and continue to cook for further five minutes.
Sprinkle the mixture on the flour, stir gently and do not stop until all the flour is incorporated.
Continue to cook it and do not forget to stir it regularly.
After five minutes you will notice that that the flour has begun to cook.
Then add the chicken to it and let it heat. Let it come to a boil and once this is done, reduce the heat to very low and let it simmer.
Cover the pan partially and stir it occasionally.
Add the cream and simmer for additional 10 minutes.
Now place the soup in the reserved bowl and sprinkle it with the bacon once more.
Your Creamy five Onion Soup is ready to serve, enjoy.
