Grilled Citrus Chicken Super Salad Recipe

This is one of those heart warming and tummy satisfying recipes that you will love to make and proud to master. Orange and Lemon juice is sprinkled over grilled chicken pieces and tossed with onions and tomatoes to make an appetizing dish.

– 2 skinless chicken breasts
– 2 cloves garlic
– fresh coriander, chopped
– fresh chives, chopped to garnish
– 1 large ripe juicy orange
– 1 lemon
– a bowl of roughly ripped up Iceberg lettuce
– 10 halved cherry tomatoes
– handful of diced red salad onion
– 1 tblsp balsamic vinegar
– salt & freshly ground pepper to taste

    Mix tomatoes, onions andĀ icebergĀ lettuce in the two salad bowls.

    Grate lemon zest. Add half of it to the salad in the bowls. Mix the other half with chopped coriander and crushed garlic. Set it aside for use in later parts of the recipe.

    Put the chicken breasts in a plastic bag and flatten them under a rolling pin. The plastic bag will not let any juices escape.

    Grill the chicken breasts in the oven on the grilling tray. Turn them over after ten minutes and grill the other side too. After another ten minutes, squeeze a lemon and orange slice over each breast. Sprinkle the zest and coriander mixture over the chicken pieces and cook for another five minutes.

    Remove the breasts and add to the salad in the bowls. Add some lemon juice and a spoonful of vinegar. Season with salt and freshly ground pepper.

    Garnish with a lemon slice and coriander twigs.
