Take a large mixing bowl and fill it with ¼ cup warm water. Dissolve sugar in it. sprinkle the yeast and let it stand for 10 minutes, it will become frothy. After 10 minutes, add 1-1/4 cup of water, honey and oil in it. Also stir in 3.5 cups of flour and salt. Mix the whole batter with a wooden spoon. A dough will start to form.
Sprinkle some flour on a counter and put the dough on it. Knead it for 8 to 10 minutes, it should be elastic and smooth. You can add extra flour so that it doesn’t stick. Take a bowl and grease it with oil. Put the dough in it and cover it with plastic. Let the dough stay in a warm place to rise. It will get double in size.
After the dough is rested, punch it down. Divide the dough in half and form each in a square. Cover the squares with a towel and let it rest for 10 minutes. Make 16 strips with each square. Place the strips on a plain surface and role each strip by hand. They should be 16 inches long. Prepare 2 baking sheets and put them on side.
Prepare the topping: in a mixing bowl whisk together 1 tbsp water and egg. In another plate, mix salt and sesame seeds. Coat the sticks with the egg wash. Roll each stick in sesame seeds. On the baking sheet, place the strips with 1 inch distance between them.
Bake them at 230 degrees. Rotate in the oven after half time for even heating. It will take around 15 minutes to bake. They should be light golden in colour.
