Use the large and heavy saucepan and pour olive oil in it. Heat the oil over medium-high heat.
Add onions in the oil and let them cook until they turn translucent. This would take about 3 minutes. After that add tomatoes and pepper along with the cooked onions and cook them for a further three minutes.
Add the shrimps into the saucepan. Let the cook for 3 minutes. Meanwhile, mix the tomato puree, bay leaf, oregano and smoked paprika. Put the mixture into the sauce pan and let it cook for a further three minutes. Add the salt and pepper as per your taste. After that, remove the saucepan from the heat. Take out the bay leaf from the saucepan and discard it.
Prepare the large skillet and turn it on to medium-high heat. Place two tortillas over there with their flat part on the bottom of the pan. Heat them from side to side. You can prepare as many tortillas as you like using this procedure.
Fold the tortillas in such a manner that they end up in half-moon shapes. Cook them until the cheese is completely melted. This would take about 1 to 2 minutes. Place them in a platter after it’s done.
Prepare the pink mayonna
Follow the same procedure with the remaining tortillas. Place the tacos on a serving platter and serve with lime wedges and hot sauce.
ise using the 1 cup mayonnaise, ½ cup crema, salt, 2 teaspoons lime juice, 1 teaspoon light agave, 1 table spoon adobo sauce and pepper. You can pour these over your tacos to enhance their flavour.
Follow the same procedure with the remaining tortillas. Place the tacos on a plate and serve with hot sauce.
