How to Make Strawberry Cheesecake Minis

It is better to prepare this dessert in paper cupcake cups and serve straight from the cups. However, you can also un-wrap the cups and place them on a nicely decorated platter.

Ingredients (serves 12 people and takes 1 hour 30 minutes)

(16-ounce) reduced-fat cream cheese – but two packages of 8 ounces each

(1/2 cup) sugar substitute

(1/2 cup) sugar

(1-teaspoon) vanilla extract

One lightly beaten egg

(1/4 cup) egg substitute

12 reduced-fat vanilla wafers

(12 ounces / 1 can) strawberry cake and pastry filling

    Take a small bowl, add cream cheese, and beat the cream until smooth. Now gradually beat in the sugar substitute and the sugar and continue beating until soft and smooth.

    Add the vanilla extract along with the egg and egg substitute to the cheese mixture. Now beat the ingredients again until smooth and set it aside.

    Meanwhile, place each vanilla wafer with the flat side down in a foil-lined cupcake cups or the muffin cups. Fill the cup with the cream-cheese mixture and bake them at 350 degree for approximately 15 to 20 minutes or until a toothpick inserted in the center of the centre comes out clean.

    Cool completely on wire racks for minimum one hour. Now, spoon the pastry filling into the centre of each cheesecake. Your Strawberry Cheesecake Minis are ready cool in the refrigerator before serving.
