Peanut Butter Sandwich Cookies Recipe

Peanut Butter Sandwich Cookies are very rich, yet the taste is so addictive that it is hard to keep them stored for long. They are many fillings which can be used in these cookies. In this recipe however, we will try the milk chocolate variation.

All purpose flour: 1 3/4 cups
Baking powder: 1 teaspoon
Baking soda: 1/2 teaspoon
Coarse kosher salt: 1/2 teaspoon
Plus 1/3 cup powdered sugar: 1/2 cup
Dark brown sugar: 1/2 cup plus 1 tablespoon
Unsalted butter, room temperature: 6 tablespoons (3/4 stick)
Creamy peanut butter: 1/2 cup
Vegetable oil: 1/2 cup
Vanilla extract: 1 1/2 teaspoons
Large egg: 1
Milk chocolate chips: 1 1/3 cups (about 8 ounces)

High-quality milk chocolate (such as Lindt or Perugina), chopped: 3 ounces
Creamy peanut butter: 1/4 cup
Powdered sugar: 2 tablespoons
Coarse kosher salt: 1/4 teaspoon
Whipping cream: 6 tablespoons

    Set the over to preheat at 350 degree Fahrenheit.

    Take a large and medium bowl. In the latter one, mix all purpose flour, baking powder, baking soda and coarse kosher salt and mix them thoroughly. Let’s call it Mixture A.

    In the large bowl, add sugar, dark brown sugar, and butter and mix them till a creamy texture is attained. Add the peanut butter and mix for a while, before introducing vegetable oil and vanilla extract, and then egg.

    Mix the batter properly, and then combine with Mixture A to form dough. Chocolate chips are also added to the dough.

    Use spoons to spread the cookie dough on the baking sheet, evenly spacing them about 1 1/2 inches apart. Bake them for about 12 minutes to achieve a golden brown look, and allow them to cool.

    The next step is to prepare the filling. Use another medium bowl and add chocolate, peanut butter, powdered sugar, and kosher salt. Melt whipping cream is a sauce pan and then pour it into the bowl. Stir until the mixture is smooth and has enough viscosity to spread properly. Allow it to chill for about an hour.
