Heat oil or butter in a pan
Heat some oil or butter in a pan. There is no need to use extra quantity as you just have to coat the base of the pan so that the ingredients don’t stick to it.
Slice leeks and cook

Mix potatoes and leeks to the cream
When the potatoes get cooked, remove them from heat and mix with the creamy mixture.
Cook like a normal omelette
It is time to cook the omelette now. You can do it just like a normal omelette recipe, but make sure that you flip it after some time to get the heat distributed evenly.
