- 1 1/2 cups pearl barley
- 4 1/2 cups water
- 1 tablespoon canola oil
- 1 red onion, thinly sliced
- 3/4 cup dried apricots, sliced
- 1/2 cup sliced almonds
- 2 tablespoons chopped fresh parsley
- 1 cup plain low-fat yogurt
- 2 tablespoons honey
- 1 lemon, juiced
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1 pinch ground nutmeg
Take a fine sieve to rinse pearl barley, then pour water into a heavy sauce pan and bring it to boil. After that mix the barley in this water and allow it to simmer. Cover this heavy sauce pan and then reduce the heat as well. Boil it until all the water gets absorbed, this process will take roughly 40 to 50 minutes after which let the barley cool at room temperature.
Then grab a small skillet and pour oil into it after which put it over medium heat. Now add onion to this oil and cook it until they turn golden brown.
After that get a serving dish and combine onion with apricot, parsley, barley and almonds by tossing them together.
