How To Make Creamy Italian Dressing

Tart and creamy, an Italian dressing takes salads to a whole new dimension, and can make even the most boring greens an exciting experience. While a large variety of bottled Italian dressings are available in the market, nothing beats the real deal. Despite what many might think, making a creamy Italian dressing at home is surprisingly simple, and the end results are completely worth the effort.

Preparation Time: 10-12 minutes
Serving Size: Yields 1 1/2 c. dressing

Ingredients:

– 1 minced garlic clove
– 1/2 tsp. salt
– 2/3 c. olive oil
– 1 lemon
– 2 or 3 drops Worcestershire sauce
– 1 tsp. granulated sugar
– 1 tbsp. fresh oregano – minced
– 2 tbsp. red wine vinegar
– 1/2 tsp. garlic powder
– 2 egg yolks
– 1/4 tsp. white pepper
– 1 tsp. Dijon mustard
– 1 tbsp. fresh parsley – minced
– 1 tsp. cracked black pepper

Instructions

    Start by putting the egg yolks and mustard in a mixing bowl together. Proceed to whisk them well – you may use an electric beater for this purpose, or simply mix them together by hand using a whisk.

    Once both ingredients combine to make a paste, add in the minced garlic clove, salt, Worcestershire sauce, sugar, oregano, red wine vinegar, garlic powder, white pepper, black pepper, and parsley. Whisk all these ingredients together, until they are well blended.

    Now, slowly start to drizzle the oil into the mixture, whisking consistently all this while without pause. Stop once all the oil has been smoothly incorporated into the mixture.

    Italian dressing is characterised by a distinct tang, so you should taste the dressing at this point, to determine how much of the lemon juice is required.

    Cut the lemon in half, and squeeze about 1 or 2 tsp. of the fresh lemon juice into the mixture. Keep whisking and tasting, until the dressing is to your taste. Pour over your favourite salad, and enjoy.
