Take a large bowl and place the Bulgur wheat in it. Pour in a cup of boiling water and stir it. Cover the bowl and let it stand for half an hour or till the grains absorbs the water properly and becomes soft.
Make the dressing in a small bowl. Whisk together the lemon juice, olive oil, garlic and salt.
Drain the soaked Bulgur wheat and shift it to a large serving bowl.
Drizzle the dressing over the Bulgur wheat and toss.
Add parsley to the whole mixture and stir well.
Refrigerate this Bulgur Wheat Salad for at least an hour before serving so that it is chilled.
Just before serving, add in the tomatoes and onions and mix well. We add the tomatoes and onions at the last moment to get the maximum freshness out of them. It truly makes a delicious affair and every single bite is worth the effort.
