First off all you have to prepare the dressing of Cucumber Melon Salad. For that, take a small mixing bowl and pour in 2 tablespoons of canola oil and 1 tablespoon of freshly squeezed lemon juice. Whisk both of the liquors until thoroughly mixed.
Top the lemon-canola oil mixture with ½ teaspoon of sugar and a dash of grounded pepper. Take a medium spoon and blend the ingredients until the sugar dissolves completely. Your salad’s tangy dressing is ready; set it aside for a few minutes until you mix the remaining ingredients.
Grab one unpeeled cucumber and wash it properly. Wipe it dry and place it on your cutting board. Now, cut it into quarter and then cut it into equal medium slices.
Place the cucumber slices in a serving bowl and add in 1 cup of cubed melon of your choice.
Drizzle the dressing all over the cucumber-melon mixture and mix smoothly until thoroughly coated.
Divide the Cucumber Melon Salad equally between two medium salad serving bowls and garnish with lemon peel or additional cucumber slices. Otherwise the colorful ingredients of the salad are enough to attract your guests.
Your Cucumber Melon Salad is ready; serve immediately.
