Make the Fattoush dressing
Take a screw-top jar and place 1/4 cup of olive oil, 1/2 cup of lemon juice and 2 teaspoons of sumac in it. Place the lid of the jar at the top to seal it thoroughly. Now, shake the jar well for a few minutes until all the ingredients mix completely and form a thick juicy mixture. Set it aside for some time until you make the salad.
Toast the pita bread
Pour 2 cups olive oil in a large sauce pan and place it on your stove over medium heat. Place the two pieces of pita breads in the sauce pan once the oil is hot. Turn the pita bread for 1 to 2 minutes or until golden and crispy. Turn off the heat, remove the sauce pan and transfer the pita breads to a wire rack in order to drain the oil.
Prepare the salad
Take a large serving bowl and place the cucumbers, tomatoes, radish, capsicum, onions, mint and parsley in it. Top the ingredients with 1 tablespoon of sumac. Mix the ingredients with a large mixing spoon.
Note: Add in the salad ingredients according the proportions mentioned above, under the ingredients.
Drizzle the salad with the lemon dressing
Now, drizzle the salad with the previously prepared lemon dressing and gently toss both mixtures to coat all the ingredients.
Add in the toasted pita bread
Break the two pita breads into four pieces each and add them to the salad.
Set the Fattoush salad aside for some time
Mix the pieces of the pita breads with the salad and set it aside for some time until the bread absorbs the lemon dressing properly. Once the salad marinates well, serve it with six medium salad bowls.
