– 60g dried cranberries, chopped
– 1/4 cup red wine vinegar
– 1/4 cup balsamic vinegar
– 4 to 6 cloves garlic, minced
– 1 1/4 teaspoons salt
– 1 cup (250ml) extra virgin olive oil
– 6 bunches watercress – rinsed, dried and trimmed
– 3 bulbs fennel – trimmed, cored and thinly sliced
– 3 small heads radicchio, cored and chopped
– 1 cup pecan halves, toasted
– gorgonzola cheese, crumbled (optional)

    Get a bowl and combine together balsamic vinegar, red wine vinegar, cranberries, garlic along with saltĀ in it. After combining these ingredients now take olive oil and slowly whisk it in this mixture so it could emulsify.
