Prepare the dressing
Take a small mixing bowl and pour 1 tablespoon of pure honey into it. Top the honey with ½ tablespoon of lime juice, ¼ teaspoon grated lime zest and 100ml creme fraiche. Combine all the dressing’s ingredients until mix up and smooth. Cover the bowl by placing a small plate at the top and set aside to marinate until you make the fruit salad.
Make the fruit salad
Grab a large serving bowl and add in 200g of finely cubed cantaloupe. Top with the same quantity of nicely peeled fresh peaches cubes and the halved fresh strawberries. Toss the fruit slices very lightly.
Pour in the dressing
Drizzle the cream-honey dressing over the fruit salad and stir very softly to coat the fruit wedges.
