The idea of getting a warm bowl of hot tasty soup on a cold winter night sounds very tempting but the fact that you can make one of these amazing soups at home within an hour is even better. Caramelized Vidalia onion Soup is the best of the lot and with a little help from internet; you can easily cook this amazing soup.
Ingredients
  • Cloves garlic, finely chopped - 6
  • Extra virgin olive oil - 2 tablespoons
  • Vidalia or other sweet onion, thinly sliced - 5 pounds
  • Dried thyme - 1 teaspoon
  • Crushed red pepper flakes - ¼ teaspoon
  • Vegetable stock or water - 4 cups
  • Reduced sodium natural soy sauce, (wheat-free, if desired) - 2 tablespoons
  • Balsamic vinegar - ¼ cup
  • Vegetarian Worcestershire sauce - 2 tablespoons
  • Sugar - 1½ tablespoon
  • Dry sherry - ⅓ cup
Instructions
  1. Take Pot large enough to hold all the above mentioned ingredients.
  2. Add oil to it and let it heat for a while over medium heat.
  3. While heating the oil, add garlic to it cook it for a while.
  4. Stir occasionally until it is browned then add onions to the pot.
  5. After you are done with onions, add some thyme and pepper flakes and cook.
  6. Wait until the onions are thoroughly caramelized. This will take around 15 minutes.
  7. The next thing you have to do after the onions are caramelized is to add some water to the pot.
  8. You can even add stock if you want and it won’t be a bad idea to add some soy sauce and vinegar to it.
  9. Also add Worcestershire sauce and sugar to the pot and cook.
  10. Let it come to a boil.
  11. Now reduce to a simmer and cover the pot.
  12. Leave it for 30 minutes and do not uncover the pot in the meantime.
  13. After that, uncover the pot and cook for 15 more minutes but this time you have to constantly stir it.
  14. Add sherry to the pot and simmer for 5 more minutes.
  15. You will notice that the soup is started to get a little thick with time and when all the above mentioned steps are completed.
  16. Your Caramelized Vidalia onion Soup is ready to serve.
