Chicken and biscuits cooked in a crock pot or slow cooker, make for a healthy one-pot meal that combines meat, vegetables and biscuits. This dish can be served for the main course and the entire family will enjoy it.
Ingredients
  • Boneless chicken breast halves, cut in large chunks - 1½ to 2 pounds
  • Chopped onion - ½ cup
  • Chopped celery - 1 cup
  • Condensed cream of chicken or cream of chicken and mushroom soup - 1 can (10¾ ounces)
  • Chicken gravy - 1 jar (12 ounces)
  • Poultry seasoning - ¼ teaspoon
  • Dried thyme leaf - ½ teaspoon
  • Dash black pepper
  • Frozen mixed vegetables (thawed) - 2 cups
  • Biscuit mix - 1⅔ cups
  • Milk - ½ cup
  • Shredded cheese - ½ cup
Instructions
  1. Take a 5 or 6 quart crock pot and place the chunks of uncooked chicken breasts on its bottom.
  2. Top the chicken breasts with chopped onions and celery and set aside.
  3. In a medium sized mixing bowl, combine together soup and gravy. Also add poultry seasonings, thyme and pepper to the soup and gravy mixture.
  4. Stir thoroughly to combine, then pour this mixture over the chicken in the crock pot.
  5. Cover the crock pot and cook on low heat for five to six hours.
  6. After six hours, open the crock pot, add thawed mixed vegetables and toss to combine.
  7. Turn the crock pot to High and cook for another 20 to 30 minutes or until the vegetables are fork tender.
  8. Meanwhile, prepare your biscuits using the packaged biscuit mix. Combine 1⅔ cups of the biscuit mix with ½ cup shredded cheese in a small mixing bowl.
  9. Pour ½ cup milk into the bowl and stir well to form a dough. Move the dough to a floured surface and knead 8 to 10 times.
  10. Pat the dough into a half-inch thick circle and cut cookies of desired shape using a floured biscuit cutter.
  11. Bake the biscuits for 10 to 12 minutes in an oven preheated at 450 degrees Fahrenheit.
  12. About an hour before serving, remove the cover of the crock pot and shred the cooked chicken breasts.
  13. Place cheesy biscuits on the top of the chicken mixture in the crock pot, replace the cover and cook on low for another hour or until the biscuits are done all the way through.
  14. Spoon the chicken and biscuit directly onto servings plates and serve immediately.
