How to Make Homemade Mayonnaise

Mayonnaise tastes great with fried chicken, fish, steaks, fries, burgers and grilled items. You can experience the same great taste by making mayonnaise at home with a small set of ingredients. The best part is that you can customize the final taste and flavour of the mayonnaise according to your preferences.

Yield: 1 ½ cups
Utensils: Mixing bowl, whisk, spatula

Egg yolks: 2
Olive oil: 1 ½ cups
Hot water: 4 tsp
Salt: ¾ tsp
Powdered mustard: ½ tsp
Sugar: 1/8 tsp
Cayenne pepper: as per taste
Lemon juice: 5 tsp

    Beat the ingredients

    First of all, add salt, powdered mustard, cayenne pepper, sugar and a teaspoon of lemon juice in a mixing bowl. Make sure you add the ingredients one by one and then use a whisk to beat the ingredients nicely until they are well combined.

    Add olive oil

    You will have to add the olive oil slowly so that it mixes well with the remaining ingredients. First, add about ¼ cup of the olive oil and whisk strongly. Make sure you do not stop after adding the oil as that may result in small blocks which are not good for consistency.

    Add lemon juice and hot water

    After adding the oil, add a teaspoon each of lemon juice and hot water and beat the mixture strongly. Repeat the process of whisking until the lemon juice and water are mixed in completely.

    Pour the remaining ingredients

    Now, follow the same process of adding olive oil, lemon juice and hot water. Add ½ cup of olive oil in a steady stream and beat the mixture before pouring lemon juice and water. You will see that the mixture will start getting thick gradually. keeping on mixing under you have reached the desired consistency. Pour the mayonnaise in a small bowl or a jar and refrigerate it instantly so that it can be used afterwards.
