Sliced apples, peeled and thinly - 18 cups
Lemon juice, freshly extracted - 3 tablespoons
Water - 10 cups
White sugar - 4 ½ cups
Cornstarch - 1 cup
Ground cinnamon - 2 teaspoons
Salt - 1 teaspoon
Ground nutmeg - ¼ teaspoon
Place 18 cups of nicely peeled apple slices and drizzle 3 tablespoon of freshly extracted lemon juice over the top.
Use a large spoon to toss the apple slices in the lemon juice until coated well.
Cover the apple mixture with a wrapping sheet or by simply placing a large plate on the top and set aside to marinade.
In the meantime, set a medium Dutch oven or deep sauce pan on the stove’s medium heat and pour 10 cups of lukewarm water into it.
Until the water starts simmering, place the white sugar, ground cinnamon, ground nutmeg and salt in a medium bowl and mix them well.
Once the water starts simmering, add in the sugar mixture and stir well to mix together all ingredients.
Continue constant gentle stirring for 3 to 5 minutes until the mixture is lightly thick.
Now add in the apple mixture and bring it to boil again.
Decrease the stove’s heat range to medium-low level and let the solution simmer for at least eight minutes, keeping the Dutch oven or saucepan covered.
Take away the solution from heat and place aside to cool.
Leave it for at least half an hour until it cools down well and thicken.
Your Apple Pie Filling is ready; now pour it into an airtight jar or container leaving 1 -inch head space.
Cool it at room temperature no longer than one and a half hours and then seal it.
Store the jars or containers in a cool and dry place like refrigerator. You can store them up to one year.
