Bake time: Nil
Total time: 20 min
Yield: 8 to 10 servings
Utensils: Stand mixer, mixing bowls, measuring spoons, hand whisk, serving plate, microwave.

Ingredients:
Eggs (Yolks and whites separated): 4
Milk: 3 cups
Vanilla: 2 tsp
All purpose flour: 4 cups
Granulated sugar: 1/2 cup
Baking powder: 2 tbsp
Salt: 1 tsp
Nutmeg: 1 tsp
Butter (melted): 1/2 cup

Instructions

  • 1

Start making your own waffles by separating all four eggs. Put the egg whites in the bowl of your mixer and the egg yolks in a clean medium sized bowl.

  • 2

Once you have separated the eggs, start whipping the whites in the stand mixer until they form stiff peaks. This will take 12 to 15 minutes.

  • 3

While your egg whites are being beaten, put half cup butter in a microwave proof bowl and melt it.

  • 4

Take a large mixing bowl and combine all the dry ingredients – flour, sugar, baking powder, nutmeg powder and salt.

  • 5

Pour milk and vanilla essence into the bowl containing egg yolks and beat all three ingredients well using a hand whisk. If you don’t have a hand whisk, use a fork to break the egg yolks and mix them with milk and vanilla.

  • 6

Now you have four separate bowls containing the ingredients for the waffles. The bowl of your stand mixer beating the egg whites to stiff peaks, a bowl of melted butter, another containing liquid mixture of yolks, and a large bowl containing all the dry ingredients.

  • 7

It’s the time to combine all these ingredients quickly, but before you do that, turn on the waffle iron.

  • 8

Pour the liquid ingredients directly over the dry ingredients and combine them gently with a plastic spatula.

  • 9

After mixing them several times, pour in melted butter and whisk until all the ingredients are combined.

  • 10

In the end add the whipped egg whites and mix thoroughly until combined well.

  • 11

Start making the waffles as soon as the batter is prepared. Set your waffle iron to medium high and allow half cup of batter to flow across the iron for 10 to 15 seconds or until golden brown. Remove the waffle to a plate and keep warm.
