Grate the cabbage finely. Use the food processor or the grater. Do the same with the carrot. Combine both of them in a large bowl and toss together well.
Season with the salt. Now use your hands to squeeze the salad. Do wash your hands and dry them before doing this process. Squeezing the vegetables will release their juices and their sweetness will play with the salt you added.
Squeeze half a lemon and add this juice to the salad, mixing in well by stirring. Add the olive oil to the salad and stir again. Leave the salad to rest for around ten minutes before serving so that the flavors blend well and you get the best of taste.
