Lentil and Olive Salad Recipe

Lentil and Olive Salad is one of the easiest and less time consuming dishes. It has a great flavour and is beneficial for health too. Utensils: Large Pot, Colander & Large Bowl

– 500g (1 1/4 lb) dried brown lentils, rinsed and drained
– 1 red pepper, seeded and chopped
– 1 small onion, chopped
– 275g (10 oz) chopped green olives
– 100ml (4 fl oz) olive oil
– 6 tablespoons lemon juice

    Take lentils and put them in a large pot. Then pour in enough water that will cover them by a few inches. Now bring it to boil and sauté until the lentil becomes tender. This process will take about 15 minutes after which drain the water from the pot and rinse the lentil under cold water by placing it in a colander. After rinsing, allow the lentils to remain in the colander for a few minutes so it can drain well.

    Now bring a large bowl in which whisk lemon juice and olive oil together then add lentils, red pepper, green olives along with onions. Now toss all of them so they can blend well. Put this large bowl in the refrigerator for 2 hours so the flavours can blend, after which you can serve it to the guests.
