Preheat your oven to 350 F. Wash the beets and trim them lightly but do not peel them right now. Sprinkle salt and pepper over the beets and pack them loosely in foils.
Bake in the preheated oven for an hour or until you feel they have gone tender. Remove them from the foil and peel off the skin. Slice them up roundly. Refrigerate them until you plan to serve.
Make the dressing now. Whip cream in a mixing bowl till it is thick. Add in the horseradish. Season now with salt and pepper. Refrigerate this too untill serving.
Right before serving, divide lettuce leaves among salad platters.Top them up with the beet slices. Make thin onion rings and scatter them over the beet.Drizzle the dressing over the beet and onion. Sprinkle dill on top and your salad is ready to make people gasp in delight.
