First of all, take a frying pan and heat oil in it for about one minute. Don’t forget to keep it on low flame. In the meanwhile, take the beetroots and peel them and then thinly slice them. By the time the oil will almost be ready, so add beetroots in it along with a pinch of salt and grounded black pepper to give them flavor. After about two to three minutes, turn off the flame or until the beetroots are a little softened. Now take the beetroots out and put them on an oil absorbing paper to get rid of the extra oil.
In a separate bowl, pour the stated amount of red grapes vinegar and white vinegar and also add the desired amount of salt and grounded black pepper and whisk well with a fork. Set it aside.
Finally take out the salad serving bowl and add the beetroots and coat them with yogurt and the dressing that you have just prepared.
Sprinkle mint leaves on the top and your beet root salad with mint is now ready to be served.
