Take a cocktail shaker and place the ice cubes in it.
Gently pour 1 ounce of apple juice, 1/2 ounce of cognac and 1/2 ounce of simple syrup into the cocktail shaker.
Now, seal your cocktail shaker properly and shake it vigorously for few seconds until all of the ingredients mix well.
Remove the lid of the cocktail, place a strainer over the opening of the cocktail shaker, and pour the drink into a cocktail glass.
Top your drink with 3 ounces of champagne.
