Hazelnut cookie bars are one of the most delicious and easy to make snacks. If you are looking forward to a family get together or a party, you can make these snacks to add more joy in your gathering.
Ingredients
  • Hazelnuts, toasted, husked: 1 cup
  • All purpose flour: 1 cup
  • Vanilla extract: 1 teaspoon
  • Powdered sugar: 1½ cups
  • Ground cinnamon: ¼ teaspoon
  • Unsalted butter, room temperature: ½ cup (1 stick)
  • Eggs, separated: 2 large
  • Salt: ¼ teaspoon
  • Apricot preserves: ¾ cup
Instructions
  1. First of all, you have to preheat your oven to around 350 degrees Fahrenheit. Then, take a baking pan and apply butter on its base.
  2. Take a bowl and add nuts, sugar and cinnamon in it. Mix them well and then put them in the processor to grind.
  3. Then, take the ground nuts mixture out of the processor and add sugar, butter, flour, vanilla extract, salt and egg yolks into it. Mix all the ingredients well with each other and put the batter on the pan.
  4. Place the pan in the oven. Before, placing the pan in the oven, it is very important for you to spread it evenly so that it may get baked properly. You have to bake it for around 15 minutes.
  5. Take the batter out and place it aside for around 10 minutes so that it may get cooled down. Meanwhile, keep the oven on the same temperature.
  6. Place the remaining preserves over the baked crust. Beat the egg whites in a bowl until it gets a little firm (but it should not get dry) and put it in the nuts mixture. Then, you have to spread the nut meringue on the layers of the preserves.
  7. Bake it again with the layers for around 25 more minutes. Get it out and set it aside to cool down completely.
  8. Make square or rectangle pieces of the crust and serve with some juice.
