How to Make Old School Meatloaf

Meatloaf is one recipe that will make any meat lover happy and satisfied. Kids and adults love it alike and specially the men. The basic meatloaf recipe that was made in back in the day is fairly simple. The juiciness of the beef and the mixture of different spices bring out a very unique flavour. It is a complete meal when served with garlic bread or mashed potatoes on the side. Do not worry if the dish finishes up quickly because everyone will want seconds. It will be sure to make older people in your family happy as they will be reminded of the older days. It is advisable to bake it free form instead of in a regular loaf pan. This will ensure that it has a juicy interior and a crispy exterior which is perfect. The recipe can be put together under 15 minutes and then it goes in the oven. The recipe can also be made before hand and put in the freezer.

Utensils: Casserole dish, mixing bowl, skillet

Ingredients:
Ground beef, pref. grass fed: 2 pounds
Yellow onion, diced: 1 medium
Stalks celery, diced: 3
Cloves garlic, minced: 4
Olive oil: 1 tsp
Eggs: 2
Worcestershire sauce: 1 tbls
Tomato paste: 1 tbls
Breadcrumbs: 1/2 cup
Milk: 1/4 cup
Shopped fresh parsley and thyme: 1/4 cup
Onion powder: 1 tsp
Salt: 1 1/2 tsp
Pepper: 1/2 tsp
Bacon: 2 slices
Ketchup: 2 tbls

    Preheat your oven to 425 degrees. In a skillet cook the celery, garlic and onions until they are soft and the onions are translucent, this will take around 2 minutes. Set them aside once done.

    Take a large mixing bowl and add the eggs, beef, breadcrumbs, tomato, milk, onion powder, herbs, sautéed vegetables, salt and pepper. Mix the ingredients with your hands. This way all the ingredients will be properly integrated and evenly mixed.

    Put the mixture into a casserole dish without giving it a proper shape. Put a layer of the bacon on top. Pour the tomato ketchup over it and spread it with a knife so that the whole loaf is covered. Bake the loaf at 425 degrees for 15 minutes. After this decrease the temperature of the oven to 350 degrees and let the loaf bake for another 40 minutes. Take it out of the oven and let it rest for 10 minutes. Slice the loaf and serve it warm.
