Ingredients:

-250g (9 oz) small seashell pasta
-4 carrots, peeled and julienned
-1/2 head leaf lettuce – rinsed, dried and chopped
-1 medium cucumber – peeled, seeded and diced
-125g (4¼ oz) frozen garden peas
-75g (3 oz) frozen sweetcorn
-475ml (16 fl oz) mayonnaise
-2 tablespoons dark brown soft sugar
-1 tablespoon curry powder
-1 clove garlic, minced
-125g (4¼ oz) grated Cheddar cheese

Instructions

  • 1

Cook the pasta, following the packet’s simple instructions. This would normally involve boiling and simmering it. Drain the hot water and let the pasta cool down under cold running water. Drain again and set aside.

  • 2

In the meantime, take a large glass salad bowl and make a bottom layer of carrots as shown in the picture. This should be followed by the lettuce layer.

  • 3

Mix the peas, cucumber and sweet corn in a small bowl and then make a layer of their mixture. This is followed by an even layer of the cooked pasta.

  • 4

Make the dressing in a small mixing bowl. Beat together curry powder, mayonnaise, brown sugar, and garlic.

  • 5

Pour the dressing into the large bowl with various layers of ingredients and spread it over the pasta using the back of a spoon.

  • 6

The last step is to add grated cheddar cheese over it all.

  • 7

Set your Spicy Seven Layer Salad in refrigerator for around one hour, before serving to the delight of guests.
