– 1 tomato, chopped
– 1 cucumber, seeded and chopped
– 1/2 red onion, thinly sliced
– 1 (400g) tin kidney beans, drained
– 125g firm tofu, diced
– handful chopped fresh basil
– 4 tablespoons salad dressing of choice
– salt and freshly ground black pepper to taste

    Take a large bowl and combine 1 chopped tomato, 1 seeded and chopped cucumber, 1/2 thinly sliced red onion, 1 (400g) drained tin kidney beans, 125g firm diced tofu and handful chopped fresh basil in it.
