– 110g (4 oz) streaky bacon
– 2 eggs
– 2 heads little gem lettuce
– 1 carrot, grated
– 1 tomato, sliced
– 1 tablespoon extra-virgin olive oil
– 1 tablespoon red wine vinegar
– salt and freshly ground black pepper to taste
Take bacon and grill them or place in a deep, large frying pan. Cook them over medium heat until they all get evenly brown. Then remove from the heat in order to chop and set them aside.
Now take eggs and place them in a saucepan with cold water and cover it. The, boil the water and remove it from the heat right away. Keep the saucepan cover and allow eggs to stand in hot water for about 10 to 12 minutes then, take them out. Let the eggs cool down after which peel and slice them.
In a salad bowl place lettuce together with tomato and carrot then add eggs, bacon, salt, pepper and vinegar. After that toss all the ingredients and the salad is ready to be served.
