Black Bean Salad Recipe

Black Bean Salad is an absolutely delicious, versatile, simple to make and nutritious dish. This appetizing salad is best prepared with freshly cooked black beans. However, if you do not have them on hand, then do not worry at all and use the easily available canned black beans.

As the name represents, black beans are the main ingredients of the salad, which are superb for adding up nutritional fiber to your healthy ways of eating. The healthy ingredients of this salad are colorful, high in fibers and proteins.

Black Bean Salad is an ideal summer side dish to be used as a dip with tortilla chips or to be served with chicken, fish or grilled meat.

Ingredients;
– (15.5 oz / 1 can) black beans – rinsed and drained
– (9 oz) frozen corn – defrosted
– (3 tablespoon) extra virgin olive oil
– (1/4 cup) red onion – chopped
– (1 tablespoon) cilantro
–  (1 to 2 Pinch) Salt and fresh pepper
– 1 tomato – chopped
– 1 small hass avocado for topping – diced
– 1 scallion – chopped
– Fresh juice of 1 lime

    Take a large serving bowl and place 15.5 oz of properly rinsed and drained black beans in it. However, if you don't have time to boil and rinse the beans, then you can use canned black beans which are easily available at your nearest grocery stores.

    Note: If you are using canned black beans, then make sure to rinse and drain them in order to remove the preservation juice.

    Top the black beans with 9 oz of frozen corn, 1 chopped tomato, 1/4 cup of chopped red onion, 1 chopped scallion, 1 tablespoon of cilantro and 1 to 2 pinches of salt and pepper for taste.

    Note: Make sure to thaw out the frozen corn before adding them to the bowel.

    Now, pour in fresh juice of 1 lime and 3 tablespoons of extra virgin olive oil.

    Take a large spoon and mix the ingredients well.

    Cover the bowl with a plastic wrapping sheet and place it in your refrigerator for at least 30 minutes in order to marinate it thoroughly.

    Remove the bowel from the refrigerator, unseal it and add one small but properly diced hass avocado before serving and enjoy.

    Note: You can garnish it with some vegetables wedges, if you want.
