Chewy Oatmeal Cookies Recipe
Cookies are one of the most common luxury and comfort foods used in the world. Known as biscuits in United Kingdom, cookies use the simplest of the ingredients in eggs, milk, sugar and butter. There are many variations which can be inculcated to this simplistic unit, and this is exemplified by the fact that nearly every country in the world has its own brand or variety.
Chewy Oatmeal Cookies are one of the most famous in the United States, and we will now go through the steps required to make this wonderful dessert.

– 1 cup chopped walnuts, lightly toasted (optional)
– 1 1/2 cups raisins
– 1/4 teaspoon nutmeg
– 1/4 teaspoon allspice
– 1/2 teaspoon cinnamon
– 1/2 teaspoon salt
– 1/2 teaspoon baking powder
– 1 1/2 cups all-purpose flour
– 3 cups old-fashioned oats, not instant or quick-cook
– 1 teaspoon vanilla extract
– 2 cups light brown sugar
– 2 eggs
– 1 cup (2 sticks) unsalted butter, softened at room temperature
– 1 tablespoon plus 1 teaspoon vegetable shortening
These ingredients are enough to make around 24 large cookies.
Preparation time is 15-25 minutes.
Cooking time is 20-25 minutes.

The first step involves the preparation of the dough. Before that though, set two racks in the oven, one in the middle and one in the lower third, and set the oven for pre-heating at 375 degree Fahrenheit. Multiple-rack baking will allow us to control the crispiness of the cookies.
Two separate baking sheets are prepared and are greased with vegetable shortenings.
Take a bowl and mix cream, butter and brown sugar, until they give a light and creamy texture. Eggs and vanilla extract is then added and after thorough mixing, the bowl is set aside.
In another bowl, a medium one, combine the oats, flour, baking powder, salt, cinnamon, allspice, and nutmeg.
The mixture in the two bowls is then combined and mixed to form a dough, and raisins and walnuts are added.
The cookies can be cut in two ways. The first method is to make a roll of about 1 cm from the dough and use cutters to create different shaped cookies. The second method is to use a scoop or a spoon to give dough the shape. Either way, the cookies should be placed appropriately apart from each other.
The cookies are placed on the baking sheets and are put inside the oven for 20-25 minutes. The position of the sheets is exchanged after 10 minutes. After the cookies are done, the baking sheets are placed on wire racks for 8-10 minutes, and then taken out.
