Easy Rocket, Cherry Tomato and Pinenut Salad Recipe

Make the table look a bit more healthy, cheery and green with this rocket, tomato and pinenut salad. The name itself suggests the difficulty level of the salad so it should not be hard for you to put together. The cheery tomatoes gleam bright red under the influence of the green rockets.

Ready in just ten minutes, the salad can come handy when you are in a rush and have to fill the salad portion on the menu. It is also bursting with flavor where the pine nuts add a crunchy texture and the Parmesan cheese blends it all into a delight.

– 1 100g bag wild rocket
– 1/2 punnet cherry tomatoes, halved
– 4 tablespoons pinenuts
– 2 tablespoons grapeseed oil or olive oil
– 1 tablespoon rice vinegar
– salt and freshly ground black pepper to taste
– 4 tablespoons grated Parmesan cheese
– 1 large avocado – peeled, stone removed and sliced

    Take out a large plastic mixing bowl. The bowl should have a lid with it. Combine rocket, cherry tomatoes, pinenuts, oil, vinegar, and Parmesan cheese in it. Season with salt and pepper. Use freshly ground pepper because it not only tastes good but has a pleasing aroma. Put the lid on the bowl and shake it well so that everything combines well and the flavors blend together.

    Divide the salad in the bowl among the four salad platters. Put avocado slices on them. The salad is all ready to be served and welcomed by anticipating guests.
