How to Make Pasta Primavera

Primavera is an Italian word which refers to a dish served with vegetables. Primavera pasta is always a simple and easy dish to rely on. Different vegetables can be used in it according to season and personal preferences. It is also flexible as it uses any of the sauces: marinara, cream or simple olive oil. This recipe uses any vegetables you have in the pantry and your favorite marinara sauce. It also gets marks for nutrition as it has vegetables in it. Prepare this simple recipe when you are short on time and want a delicious meal.

Ingredients:
Carrot, peeled and cut into 2×1/2-inch strips: 1
Eggplant, sliced into 1/4-inch slices: 1/2 small
Zucchini, sliced into 1/4-inch slices: 1 medium
Bell pepper, any color, cut into thin strips: 1/2
Red onion, sliced into 1/4-inch slices: 1/2
Pint of cherry tomatoes, halved: 1
Salt and pepper
Olive oil: 3 tbsp
A sprinkling of garlic salt
Italian seasoning: 1/2 teaspoon
Spaghetti or marinara sauce:  1/4 cup
Pasta: 1/2 pound

    Put water in a pot and bring it to boil for the pasta. In another large skillet, put oil on medium heat. Put in the vegetables and stir them so that all are coated with oil. Cook them for about 10 minutes and check if the vegetables are just cooked. Turn the heat off but let the pan remain on the stove.

    While the vegetables are cooking, put the pasta in the boiling water and cook it according to instructions on the packet. Keep an eye on the time so that the pasta gets cooked just after the vegetables are done.

    Pour ¼ cup of marinara sauce and ¼ cup of water to the vegetables. If you are using bottled sauce, you will require less seasoning; just put in about ½ teaspoon of herbs. You can add garlic, oregano, rosemary, basil or any other of your choice. A plain tomato sauce will require more seasoning to bring in taste.

    Check the pasta for readiness. Once it is cooked but is still firm to touch, take it out of the water and drain it. Add the pasta to the skillet with vegetables. Taste for salt and pepper and adjust if more sauce or seasoning is required. Mix the cherry tomatoes to the pasta and give a stir.
