How to Make Thai Spring Rolls

Thai spring rolls are easy to prepare and make a great snack that your family will love. To complement the taste, you can serve them with some delicious dipping sauce. The best part about Thai spring rolls is that it can be made in vegetarian or baby shrimp varieties.

Yield: Approximately 1 dozen spring rolls
Utensils: Frying pan, stove

Minced garlic cloves: 3
Thumb-size piece of galangal or grated ginger: 1
Green onions, sliced into matchstick pieces: 2
Red Chili: 1 or Cayenne pepper: ½ or 1 teaspoon (you can skip this in case you like mild spring rolls)
Shredded or finely chopped cabbage: ½ cup
Shiitake mushrooms, cut into matchstick pieces: 4 to 6
Medium to firm tofu which are sliced into matchstick pieces: ½ cup (In case you are cooking non-vegetarian then add ½ cup of cooked baby shrimps)
Bean sprouts: approximately 2 cups
Fresh coriander or basil which is roughly chopped: ½ cup
oil: 2 tablespoon plus more for deep-frying purposes
Spring roll wrappers (thawed in case it is frozen): 1 package

Stir-Fry Sauce:
Regular soy sauce: 2 tablespoons
Fish sauce or vegetarian stir-fry sauce: 2 tablespoons
Lime juice: 2 tablespoons
Sugar: ¼ teaspoon

    Add garlic, galangal, green onion and chili

    Take a large frying pan and add three minced garlic cloves, one thumb size piece of galangal, two green onions which are sliced into matchstick pieces and one minced red chili. Then you need to stir-fry until fragrant.

    Add cabbage, mushrooms and tofu or shrimp

    Now add ½ cup of shredded cabbage, four to six shiitake mushrooms which are cut into matchstick pieces and ½ cup of tofu or cooked baby shrimp. While stir-frying, you need to pour sauce and continue frying until the vegetables become soft. This will take around one to two minutes. Later remove from heat and add bean sprouts in the mixture. You are required to add salt and soya sauce at this stage according to taste.

    Assemble rolls

    In order to assemble rolls, lay roll wrappers on a flat clean surface and add one tablespoon of filling to them. Now spread the filling along the width. Add coriander and basil to the filling. Fold from left and right sides over the filling. Lift the end and tuck, rolling upwards.

    Next you need to fry the rolls. Place oil in a deep frying pan and turn the heat to medium-high settings. Then place rolls in the pan with help of tongs. You will know the spring rolls are fried properly when they turn golden-brown.
