Boil the noodles untill soft (follow packet instructions). Drain the water and give them time to cool down. Place them in a large bowl now.
In a smaller bowl, mix the Lime juice, Lemon juice, grated ginger, chilli, olive oil, coriander, fish sauce and sugar. Mix well with spoon. This will serve as your dressing for the salad.
To the noodles in the large bowl, add the prawns, asia greens and peanuts. To this add the dressing you prepared. Toss well so that an even taste is achieved. Make portions into smaller bowls for serving. The salad tastes best when served fresh.
