– 2 cardamom pods
– 1 cinnamon stick (about 3 inches)
– 4 whole cloves
– 8 individual tea bags
– 1 tablespoon honey
– 4 cups water
– 2 cups milk
– 1 tablespoon vanilla extract
– ½ cup heavy whipping cream
– 1 ½ teaspoons confectioners’ sugar
– Ground allspice

Instructions

  • 1

Place 8 whole peppercorns in a large mortar and top with half a teaspoon of whole allspice, 2 cardamom pods, 1 large cinnamon stick and 4 whole cloves.

  • 2

Now use the mortar’s pestle to crush the mixture for few minutes until the aroma is released and it forms a fine powdered mixture.

  • 3

Pour this powdered mixture into a mixing bowl and set aside, placing a plate at the top to cover it.

  • 4

Decant 4 cups of water into a kettle and bring it to a boil.

  • 5

Once simmering, remove the kettle from the heat and carefully pour the boiling water into the bowl - containing the ground allspice mixture.

  • 6

Now place 8 teabags into the boiling water and add in 1 tablespoon of honey.

  • 7

Now cover the bowl and let the tea bags steep for 5 to 6 minutes.

  • 8

For the meantime, pick a small clean saucepan and pour 2 large cups of milk into it and bring to a boil. Once it starts boiling, reduce the stove’s heat to medium-low range and let the milk simmer for 3 minutes.

  • 9

Until the milk is simmering, strain the tea into a large heat proof pitcher and top with 1 tablespoon of vanilla extract.

  • 10

Take away the boiling milk from heat and pour it into the heat proof pitcher. Use a large spoon to stir it until the milk mixes well with the tea.

  • 11

In a small mixing bowl, blend half cup of heavy whipping cream and one and half cup of confectioners' sugar until it forms a rich mixture with soft peaks.

  • 12

Now pour the tea into six cups or mugs, dividing equally.

  • 13

Add a dollop of whipped cream at the top of each Vanilla Chai Mix and dust with the remaining ground allspice.

  • 14

Serve warm and enjoy lip-smacking sips.
