Ingredients:

– 1/2 cup dry lentils
– 1 1/2 cups water
– 1/2 (15 ounce) can garbanzo beans, drained
– 2 tomatoes, chopped
– 4 green onions, chopped
– 2 minced hot green chile peppers
– 1 green bell pepper, chopped
– 1/2 yellow bell pepper, chopped
– 1 red bell pepper, chopped
– 1 lime, juiced
– 2 tablespoons olive oil
– 1/4 cup chopped fresh cilantro
– salt to taste

Instructions

    Take dry lentils and put them in a pot that has 1 ½ cups of water. Now boil this water until it simmers. Sauté it for about 30 minutes or until the lentils become tender.

    Now get a medium sized mixing bowl in order to combine cooked lentils with tomatoes, chickpeas, green chilies, green onions, lime juice, bell pepper, cilantro, olive oil and sat as per your liking or taste.

    Now toss all these ingredients well and then allow them to chill for about 20 minutes.  Once it is at room temperature, the salad will be  ready to serve at once.
