Greek Pasta Salad Recipe

Fresh vegetables, olives and herbs are especial characteristics of Greek cuisine and you will find them in almost all of its dishes. Similar is the case with Greek Pasta Salad, although it’s a salad that also has pasta in it, yet it gives a true authentic Greek taste which will take you back to Greece. Besides being a delicious dish, Greek Pasta Salad is also quite filling, so you can eat it as a main dish or serve it with main course items to bring more taste. Ingredients:

– 2 cups penne pasta
– 1/4 cup red wine vinegar
– 1 tablespoon lemon juice
– 2 cloves garlic, crushed
– 2 teaspoons dried oregano
– salt and pepper to taste
– 2/3 cup extra-virgin olive oil
– 10 cherry tomatoes, halved
– 1 small red onion, chopped
– 1 green bell pepper, chopped
– 1 red bell pepper, chopped
– 1/2 cucumber, sliced
– 1/2 cup sliced black olives
– 1/2 cup crumbled feta cheese

    Take a large pot and fill it with lightly salted water then, boil it till the water starts rolling over high heat. After the water is boiled, stir in penne pasta and boil it again. Sauté this pasta without covering the pot as you need to stir it occasionally until al dente. This process will take about 11 minutes after which you will rinse the pasta under cold water and then drain it well in the sink with the help of a colander set.

    Now whisk the lemon juice, vinegar, oregano, garlic, olive oil, salt and pepper together and then leave them aside. After that take a large bowl and combine tomatoes, green and red pepper, onion, olives, cucumber along with feta cheese in it. Then, pour dressing over this mixture of pasta and other ingredients and mix it well. After mixing cover this large bowl and refrigerate it for about 3 hours before it is ready to be served.
