Marinated Sundried Tomato Salad Recipe

Tomatoes have always fascinated us, in all forms. Be it the red cherry ones with ruby gleam in them or the yellow Italian ones that add such color to dishes. They are also responsible for delighting us in forms of ketchup and sauces, and dont they make lovely garnish when cut like a crown? Welcome to the world of tomatoes. This is how amazing  they can get. They make a whole salad in by themselves and taste so deliciously murderous. Yes! Talking about the marinated sun dried Tomato Salad. Do not get hesitant after noting the preparation time. It is because you have to keep them marinated overnight. This salad is totally worth the wait. Prepare beforehand – at least a day before you want to serve the salad. Follow our step by step guide for complete details.

Utensils needed: mixing bowl, cling film, salad bowl


– 1 jar of dried tomatoes (not in oil)
– handful of basil, chop it up
– 2 cloves garlic, chop it
– 200ml olive oil
– 200 ml vinegar
– 1/2 kg cherry tomatoes, cut in half or sliced
– a bunch of spring onions, chopped
– handful of toasted pine nuts

    Put the dry tomatoes in a bowl of cold water and let them remain in it till they are soft. When they are, drain the water and cut the tomatoes on a cutting board into pieces.

    In another bowl, mix the basil, garlic, olive oil and vinegar. Whisk together well. This will be your marinade. Mix the tomatoes into this. After mixing well, cover this bowl with a cling film and place it in the refrigerator. Let it remain there overnight.

    Before serving the next day, mix the nuts, cherry tomatoes and onions. Add the marinated tomatoes to it and toss well. The salad is ready to please everyone around it. You can serve it with some cheese or garlic bread to add to the package.
