Pick a medium non-sticking saucepan and pour in 3 cups of cold water. Add in ½ tablespoon of salt and set the saucepan on stove with a high heat.
Wait until the water starts boiling and add one cup of the brown lentils into it.
Now, reduce the heat of the stove to medium-low and cover the sauce pan by placing its lid on the top. Let it simmer 25 to 30 minutes or until the lentils are lightly firm but thoroughly cooked.
Until the lentils are cooking, you can make the dressing for the salad. Simply pick a medium bowl and add in sweet pepper, parsley, lemon juice, tomatoes, onion and the garlic. Sprinkle the remaining ½ teaspoon of salt and the ground black pepper over the mixture. Mix up these ingredients until thoroughly incorporated.
Use a large sieve to drain the cooked brown lentils and place in a large serving bowl.
Pour the dressing into the salad and toss to coat the ingredients. Place some fresh lemon wedges on the top for garnishing.
