Christmas Cake Recipe for Diabetics

Who doesn’t like eating some home baked cake on Christmas day? A cake on your dinner table on Christmas day just gives your eyes a soothing feeling but if you have a diabetic patient in your home or in your friend’s circle then making a Prune cake would be a wise decision as it is calorie free and it’s still yummy. For those of you who don’t know what prune cake is, it is a sugarless cake made for people with diabetes. The cake contains a good amount of dry fruit like raisins, nuts and is mainly flavoured with cinnamon and nutmeg. If you wish to garnish the top you can do so by sprinkling flakes of coconut and chopped walnuts.

– 2 cups water
– 2 cups raisins
– 1 cup unsweetened apple sauce
– 2 eggs
– 2 tbsp liquid sweetener
– 3/4 cup cooking oil
– 1 tsp soda
– 2 cups plain flour
– 1 1/4 tsp cinnamon
– 1/2 tsp nutmeg
– 1 tsp vanilla

    Take a few minutes before doing anything and thoroughly wash your hands and the entire kitchen counter or work area that you will be using to prepare this delightful cake recipe. You will also want to wash all the utensils and other items that will be used to put together this cake. Make it a habit to keep all the work surfaces clean in your kitchen before preparing food items.

    Cook raisins in water until tender and drain the remaining water. The key is make sure that the raisins are nice and soft.

    Now add the raisins, applesauce, beaten eggs, liquid sweetener, cooking oil and make a mixture. It is entirely up to you as to the overall amount of a particular ingredient depending on your own personal taste.

    Stir the mixture well. Blend in the other ingredients and mix them as well. Add vanilla extract to taste. Remember there is a lot of space for you to experiment with different variations of this easy to do recipe. You can always add or subtract various items depending on your preferences. Also, while blending the mixture be sure to get a nice smooth texture so check the consistency while mixing.
